Saucisson Sec translated as ‘dry sausage’ is inspired by french recipes for dry sausage. Unlike our other salami style products these sausages are not fermented but simply dried in our ageing room until they are just right. Our suacisson sec with blue cheese is made with our free range pork, salt, pepper and a generous portion of a local blue cheese, Strathdon Blue.
Strathdon Blue is made by Highland Fine Cheeses just 5 miles from our farm in the town of Tain. It adds a delicious and complementary umami flavour to the sausage. Once you start eating it, its very difficult to stop! To make these sausages we use an edible natural sheep casing which makes them the perfect size to snack on with no peeling required.
