LOMO (Cured Pork Loin)


Lomo is cured pork loin also know as Lonza in Spain.  We make ours with de la Vera paprika and garlic.

Our Lomo is made from cured pork loin.  A similar cut as that is used for making back bacon.  We cure this in curing salt and spices. It is then air dried in our ageing room until it is ready for harvesting when it is sliced it very thinly for you to enjoy.
