Cured Pork Loin (Lomo/Lonza)


Pork loin cured with salt and spices and then air dried.  Also known as Lonza (Spain) or Lomo (Italy).

Our pork loin is made from the muscle that runs down the back of the pigs – where the bacon or chops usually come from.  We cure this in curing salts, spices, fennel, garlic and  orange.  It is then air dried in our ageing room until it is ready for harvesting.  We then sliced it very thinly for you to enjoy.

Ingredients:  Pork, salt, bay, juniper, black pepper, orange, garlic, sodium nitrite, sodium nitrate.
