Our Winter Spice salami is based a recipe from northern Italy and is made with our free range pork and the sweet spices we often associate with  winter and the festive season such as cinnamon, cloves, ginger and nutmeg.  It is a tasty addition to a charcuterie platter at any time of the year though and has a wonderful sweet and sour flavour.  The sweet coming from the seasoning and the slightly sour flavour from the fermenation process.
